I also highly recommend the DK Eyewitness Travel series of books.   They not only have detailed maps included, but also lots of cut-out diagrams of ancient buildings, recommended walkig tours, and great pictures and illiustrations.   There is one for Athens and Mainland Greece that looks like it would be exactly what you need to plan your walking tour. Je recommande fortement le DK Eyewitness Voyage série de livres.
